Ingredients

  • 1 medium or large carcass (for 4 persons)
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 tsp. baking soda
  • 1/4 lb. fatback or salt pork, sliced thin
  • 2 medium onions
  • 1 lemon or 1 large tomato (ripe or green)
  • 4 medium sweet potatoes or yams (about the size of a man's fist)
  • butter
  • few raisins
  • brown sugar

Directions

    Clean the 'possum by scalding and scraping.

    Chill overnight. Parboil in a large vessel in a large quantity of water to which has been added 1 teaspoon of baking soda.

    Cook until tender. This does two things, cooks out much of the fat grease and makes the meat tender.
