- 1 garlic clove, crushed
- 1/4 tsp. salt
- 1/4 tsp. freshly ground pepper
- 1 1/2 lb. small new red potatoes, scrubbed and quartered
- 1 Tbsp. chopped fresh parsley
Directions

1Preheat oven to 425°.

2Mix oil, garlic, salt and pepper in 9-inch square baking dish.

3Add potatoes and turn to coat with oil.

4Bake until tender and browned, 30 to 35 minutes.
