  • 3 1/3 lbs pumpkin, deseeded, peeled, cut in wedges
  • 3 1/3 lbs potatoes, scrubbed, cut in half lengthwise
  • 8 None tomatoes
  • 2 cloves garlic, peeled and cut in half
  • 3 sprigs each rosemary, roughly chopped
  • 3 sprigs sage, roughly chopped
  • 3 sprigs thyme, roughly chopped
  • 1 tbsp coarse salt
  • 2/3 cup olive oil

Directions

    Preheat oven to 400°F. Distribute pumpkin, potatoes, tomatoes and garlic over 2 oiled baking sheets. Sprinkle with herbs and coarse salt and drizzle with olive oil. Season to taste. Roast for 45 mins.
