- 6 quails dressed
- salt
- pepper
- 1 cup Madeira
- 1 cup raisins
- 2 whole cloves
- 2/3 cup cooked brown rice
- 1 pinch ground ginger or mace
- 1 tablespoon melted butter
- butter Additional soft
- 1 Orange
Directions

1Wash and dry birds; sprinkle inside and outside with salt and pepper.

2Combine Madeira, raisins and cloves; bring to a boil.

3Simmer 5 minutes to reduce in volume slightly.

4Remove cloves; strain mixture, reserving raisins and wine.

5Combine raisins with rice and ginger; stir in butter.

6Stuff quails with mixture; truss birds and rub skin with soft butter.

7Blend reserved wine with orange juice; set aside.
