Roast Tomato Salad

- 12 tomatoes
- 6 sprigs thyme
- olive oil
- red wine vinegar
- salt
- fresh ground black pepper
Directions

1Wash the tomatoes, then slice them in half across the middle.

2Place them cut side up in a baking dish and drizzle over some olive oil.

3Season with salt and pepper and the leaves of the thyme sprigs.

4Roast at 190 C or 375 F for about 40 minutes, or a little less depending on how ripe the tomatoes are.

5You want to bake them until they are puffed and tender.

6As soon as they come out of the oven, shake over a little vinegar and serve with warm, crusty bread.
