Roast Venison

Ingredients
- 2 1/2 c. dry red wine
- 1/2 c. apple cider
- 3 bay leaves
- 4 whole peppercorns
- 1 (6 lb.) venison roast
- 1/4 c. butter or margarine
- sour cream gravy
Directions

1In a shallow dish, combine first 4 ingredients.

2Place venison in marinade.

3Cover and chill at least 8 hours, turning occasionally.

4Preheat oven to 350°.

5Place meat on a rack in a roasting pan, fat side up.

6In a small saucepan, melt butter.

7Stir in 1 cup marinade.

8Insert meat thermometer in thickest part of meat, not touching bone or fat.

9Place meat in oven and roast about 3 hours, allowing 25 minutes per pound for medium rare.

10Baste occasionally with marinade mixture.

11Serve with sour cream gravy.
