- 2 lb. fresh asparagus, trimmed
- 2 Tbsp. olive oil
- pinch salt
- shaved parmesan cheese
- 1/4 tsp. pepper
Directions

1Arrange oven racks to middle and lower third of oven.

2Heat oven to 400 degrees.

3Divide asparagus and spread on two jelly-roll pans.

4Toss each with 1 tablespoon oil and salt.

5Roast 10 minutes. Switch pans between racks and roast 10 minutes more until stalks are tender.

6Sprinkle top with cheese if desired and pepper.

7Makes 4-6 servings.
