Roasted Bell Peppers

- 8 to 12 bell peppers
- 3 to 6 cloves garlic or to taste
- 1/2 c. olive oil or more if needed
Directions

1Heat olive oil; add minced garlic cloves and saute for a few minutes.

3Add peppers and bake at 250° for about 45 minutes, turning and basting often.

4Cool and store in jar in refrigerator.

5Use in salads, stews, soups, sandwiches, pizza, etc.
