Roasted Bell Peppers

  • 8 to 12 bell peppers
  • 3 to 6 cloves garlic or to taste
  • 1/2 c. olive oil or more if needed

Directions

    Heat olive oil; add minced garlic cloves and saute for a few minutes.

    (Do not brown!)

    Add peppers and bake at 250° for about 45 minutes, turning and basting often.

    Cool and store in jar in refrigerator.

    Use in salads, stews, soups, sandwiches, pizza, etc.
