Ingredients

  • 2 lb bone in chicken thighs
  • 2 red onions cut into thick wedges
  • 6 roma tomatoes, quartered
  • 6 red new potatoes, small size
  • 8 whole cloves of garlic
  • 3 tsp thyme
  • 1/2 tbsp salt
  • 1 tsp pepper
  • 1/2 tsp tarragon
  • 2 tbsp olive oil
  • 1 tsp balsamic vinegar

    Heat oven to 375F.

    In a large bowl combine all ingredients together except tomatoes.

    Transfer to large roasting pan.

    Cook covered for 20 minutes.

    Then uncover , raise temperature to 400F, add tomatoes and cook additional 25 minutes or until internal temperature reaches 180F.
