- Plum tomatoes
- Shallots
- Garlic
- Fresh Basil
- Oregano
- Thyme
- Kosher or Sea salt, Cracked pepper
- Your favorite olive oil
Directions

1Preheat oven to 250
-
2Halve tomatoes legnthwise

3Remove seeds, pulp and stem end

4Place on roasting rack on a sheet pan

5Mince shallots and garlic, add to bowl

6Chop herbs, add to bowl

7Add S & P to bowl
-
8Add Olive Oil
-
9Mix well
-
10Spoon mixture into each tomato
-
11Place in middle of oven for 21/2 - 3 hours intil the edges resemble a prune

12Pierce each tomato to drain oil

13Serve with crusty bread rounds (fresh or toasted)
