- 4 Yukon Gold potatoes
- 4 tablespoons vegetable oil
- Salt and pepper
- 2 tablespoons chopped parsley
Directions

1Peel the potatoes and cut into 1/2-inch wedges.

2Dry the potatoes with a towel.

3To a heated skillet, add the oil.

4Add the potatoes, salt and pepper.

5Saute the potatoes for about 3 minutes, stirring to make sure the potatoes are well covered in oil.

6Transfer to a preheated 340 degree oven for about 30 minutes until the potatoes are golden and cooked through.

7After 15 minutes, toss the potatoes and continue roasting.

8Toss the potatoes with the parsley just before serving.
