- 1 1/2 lb. unpeeled new potatoes
- 1/2 head whole garlic cloves
- 1/4 c. chopped fresh rosemary
- 1/4 c. onion, chopped
- 1/4 c. chopped fresh rosemary
- salt
- pepper
Directions

1Preheat oven to 375°.

2Cut the potatoes in halves or quarters and place them in a baking dish with the whole cloves of garlic and onions and a small amount of water.

3Toss with rosemary. Cover pan and bake for 20 minutes, then remove the cover and roast for another 10 to 15 minutes.

4Add salt and pepper to taste.
