- 2 lb. potatoes, cut into 1 1/2-inch cubes (about 6 c.)
- 1/3 c. light olive oil
- 1 Tbsp. crushed rosemary
- salt and pepper to taste
Directions

1Preheat oven to 400°.

2In saucepan, cover and cube potatoes with cold salted water and bring to boil.

3Drain potatoes and hold on side.

4In roasting pan, heat the olive oil and rosemary.

5Stir potatoes into hot oil and salt and pepper.

6Bake for 45 minutes or until golden brown.

7Stir once.
-
8Serve immediately.
