  • 2 quail per person
  • salt and pepper
  • butter or margarine
  • chicken broth

    Wipe birds with damp cloth.

    Rub generously with butter, salt and pepper, inside and out.

    Brown in very hot oven, 450° to 500° for 5 minutes.

    Reduce heat to 350°; add a little chicken broth and steam 20 to 25 minutes.

    The steaming keeps birds moist and helps hold flavor.
