- 1 large beet
- 4 large parsnips
- 1 large sweet potato
- 3 small red potatoes
- 1 medium onion
- 2 tbsp. olive oil
- 1/2 tsp. salt
- 1/4 tsp. Freshly ground pepper
- 2 tbsp. butter
Directions

1Heat oven to 400 degrees F.

2In a bowl, toss vegetables, olive oil, salt, and freshly ground pepper.

3Melt butter in a jelly-roll pan in the oven for 5 minutes.

4Add vegetables to pan; spread out.

5Roast vegetables for 30 minutes.

6Increase oven temperature to 450 degrees F. Stir vegetables and roast 15 more minutes, or until tender and golden.
