- 10 ounces salmon with skin
- 2 teaspoons olive oil, extra-virgin
- 1 tablespoon chives chopped
- 1 tablespoon tarragon leaves optional
Directions

1Preheat over to 425F (220C).

2Line a baking sheet with foil.

3Rub salmon all over with 2 teaspoons oil.

4Roast skin side down on foil-lined baking sheet until fish is cooked through, about 12 minutes.

5(Check if fish flakes easily with fork after it bakes 10 minutes.

6Continue baking only if it doesn't.)

7Using a metal spatula, lift salmon off skin and place salmon on serving plate.

8Discard skin.

9Sprinkle salmon with herbs and serve.
