- 1 12 lbs large shallots, trimmed
- 12 teaspoon salt
- 14 teaspoon black pepper
- 2 tablespoons olive oil
- 3 sprigs fresh rosemary
Directions

1Preheat oven to 350.

2Arrange shallots in a shallow baking dish.

3Sprinkle with salt and pepper and drizzle with olive oil.

4Add the rosemary, cover with foil and roast for 30 minutes.

5Uncover and roast for 25-30 minutes longer, until the shallots are tender.

6Increase oven temperature to 450 and roast the shallots for 10 minutes, until browned.
