  • 1 12 lbs large shallots, trimmed
  • 12 teaspoon salt
  • 14 teaspoon black pepper
  • 2 tablespoons olive oil
  • 3 sprigs fresh rosemary

    Preheat oven to 350.

    Arrange shallots in a shallow baking dish.

    Sprinkle with salt and pepper and drizzle with olive oil.

    Add the rosemary, cover with foil and roast for 30 minutes.

    Uncover and roast for 25-30 minutes longer, until the shallots are tender.

    Increase oven temperature to 450 and roast the shallots for 10 minutes, until browned.
