Roasted Spring Veggies

  • 10 spears Asparagus
  • 1/2 Onion, Sliced
  • 2 Yellow Squashes
  • 1 Tablespoon Olive Oil
  • Salt And Pepper, to taste

Directions

    Wash and slice, chop veggies. Dry them and toss in a bowl with olive oil, add salt and pepper, or whatever seasonings you wish. Cook in the oven at 400°F (I put mine on a cookie sheet covered in foil sprayed with cooking spray). Larger veggies should be on the outside edges and smaller ones more to the middle.

    Cook until veggies are crisp (a little brown is okay), about 20 minutes.
