Roasted Sweet Potatoes

  • 1 1/2 lb. sweet potatoes, scrubbed and cut into 1-inch cubes
  • 1 to 2 Tbsp. butter
  • salt and freshly ground black pepper

Directions

    Place potatoes in one layer in a lightly buttered baking dish. Dot with butter and roast in preheated 375° oven for 25 to 30 minutes or until tender, tossing every 10 minutes and adding more butter, if necessary.

    Serve hot with salt and pepper to taste.
