Roasted Tomato Dip

  • 2 cups ripe tomatoes, chopped
  • 1 teaspoon olive oil
  • 12 teaspoon salt
  • 2 tablespoons finely diced onions
  • 2 tablespoons chopped fresh basil
  • 1 teaspoon balsamic vinegar
  • 12 teaspoon black pepper

Directions

    On a rimmed baking sheet, combine tomatoes, oil and salt.

    Roast in a 450* oven for 10 minutes.

    Turn oven to broil and roast tomatoes until golden brown, about 5 minutes.

    Transfer to a food processor.

    Add onion, basil, vinegar and pepper and pulse until smooth.

    Serve immediately or refrigerate for up to 3 days.
