- 2 cups ripe tomatoes, chopped
- 1 teaspoon olive oil
- 12 teaspoon salt
- 2 tablespoons finely diced onions
- 2 tablespoons chopped fresh basil
- 1 teaspoon balsamic vinegar
- 12 teaspoon black pepper
Directions

1On a rimmed baking sheet, combine tomatoes, oil and salt.

2Roast in a 450* oven for 10 minutes.

3Turn oven to broil and roast tomatoes until golden brown, about 5 minutes.

4Transfer to a food processor.

5Add onion, basil, vinegar and pepper and pulse until smooth.

6Serve immediately or refrigerate for up to 3 days.
