- 24 whole Roma Tomatoes, Halved
- 1 cup Olive Oil
- 8 cloves Minced Garlic
- 1 Tablespoon Italian Seasoning
- 1/2 Tablespoons Salt
Directions

1Preheat oven to 300F (mine doesn't go any lower!).

2In two broiler pans (the bottom part), place halved tomatoes in a single layer.

3Mix the remaining 4 ingredients together and pour over the tomatoes.

4*You could also put all the ingredients in a large bowl, and then transfer to the broiler pans.

5Transfer the 2 broiler pans into your oven. Cook for at least 2 hours.

6Cool tomatoes.

7Transfer tomatoes into small freezer bags, ready for a meal at any time.

8*I do these by the bushel, so I've made this recipe for a small batch. The aroma fills your house, and you will WANT to eat them immediately!
