Roasted Tomatoes

  • 24 whole Roma Tomatoes, Halved
  • 1 cup Olive Oil
  • 8 cloves Minced Garlic
  • 1 Tablespoon Italian Seasoning
  • 1/2 Tablespoons Salt

Directions

    Preheat oven to 300F (mine doesn't go any lower!).

    In two broiler pans (the bottom part), place halved tomatoes in a single layer.

    Mix the remaining 4 ingredients together and pour over the tomatoes.

    *You could also put all the ingredients in a large bowl, and then transfer to the broiler pans.

    Transfer the 2 broiler pans into your oven. Cook for at least 2 hours.

    Cool tomatoes.

    Transfer tomatoes into small freezer bags, ready for a meal at any time.

    *I do these by the bushel, so I've made this recipe for a small batch. The aroma fills your house, and you will WANT to eat them immediately!
