- 6 ripe, red tomatoes (about 3 lb.)
- 2 Tbsp. vegetable oil
- 1/2 tsp. dried basil leaves, crushed
- 1/4 tsp. dried thyme leaves
- 1/4 tsp. salt
- 1/4 tsp. ground black pepper
Directions

1Preheat oven to 425°.

2Core the tomatoes and cut in half horizontally.

3Squeeze gently to remove the seeds.

4Place them cut side up on a rack in a broiler pan.

5In a small bowl, combine the oil, basil, thyme, salt and pepper. Brush over the cut sides of the tomatoes.

6Place cut side down on the rack and bake for 30 minutes.

7Remove the skin, if desired.

8Use in pasta salad or as a vegetable side dish.
