  • 3 lge carrots
  • 3 stalks celery
  • 1 lge onion
  • 1 T olive oil
  • 8 cloves garlic - chopped
  • 4 c water
  • 1/4 c dried mushrooms (porcini)
  • 1/4 tsp dried thyme
  • s & p

Directions

    Preheat oven to 400. Toss veggies in oil. Bake for 10 mins. Add garlice, toss & bake another 10-15 mins til browned. Remove pan, add 1 c water & pour into pot w/remaining ingreds. Bring to boil & simmer for 30 mins.
