- 12 red onion, chopped
- 10 peeled baby carrots, cut in half
- 2 garlic cloves, diced
- 14 teaspoon salt
- 1 tablespoon olive oil
- 14 teaspoon ground black pepper
Directions

1Preheat oven to 375 degrees.

2Mix all ingredients in a large bowl until veggies are coated.

3Place in one layer in baking or roasting pan.

4Bake in oven for 25-30 minutes, turning half way through.
