  • 2 red bell peppers, chopped in cubes
  • 12 red onion, chopped
  • 10 peeled baby carrots, cut in half
  • 2 garlic cloves, diced
  • 14 teaspoon salt
  • 1 tablespoon olive oil
  • 14 teaspoon ground black pepper

Directions

    Preheat oven to 375 degrees.

    Mix all ingredients in a large bowl until veggies are coated.

    Place in one layer in baking or roasting pan.

    Bake in oven for 25-30 minutes, turning half way through.
