Rock Cornish Game Hens

- 4 Rock Cornish game hens
- 1/2 c. butter or margarine
- 1 c. uncooked rice
- 1/2 lb. mushrooms, sliced
- 1/2 tsp. salt
- 1 c. chicken bouillon
- 1 c. dry red table wine or cooking sherry
Directions

1Remove giblets from hens. Wipe hens with damp cloth; tie legs together with string.

2Melt butter in Dutch oven over medium heat. Put hens in Dutch oven; brown well on all sides.

3Remove hens; keep warm.

4Place rice in Dutch oven; cook and stir until lightly browned.

5Add mushrooms, salt, bouillon and red wine.

6Place hens on top of mixture.

7Cover with tightly closed lid.

8Lower heat; simmer for 1 hour to 1 hour and 15 minutes, or until rice is tender and hens are done.

9Makes 4 servings.
