Rolled Bacon Omelet

- 2 bacon, slices
- 2 eggs
- 1 tablespoon milk
- red pepper flakes
- salt and pepper
- cilantro
- 14 cup Mexican blend cheese
Directions

1In a small pan (with curved edges if possible) fry the bacon until it is crunchy.

2Take out your bacon (and turn the burner to medium) and and chop it into inch pieces.

3Pour out some of the bacon grease until the bottom of the pan is only just covered.

4To save time start this step while your bacon is frying.

5Beat the eggs together with the milk and salt and pepper to taste in a small bowl.

6Pour the eggs into the pan.

7Leave the eggs uncovered for 45 sec and then check if the bottom is nicely golden brown and the top looks solid.

8If not let it cook longer.

9Now add the bacon, cilantro and cheese (but not all leave some cilantro and cheese for garnish).

10Or anything else you feel like putting inches.

11Roll up the omelet and put it on a large plate sprikle the remaining cheese and some cilantro.

12Add the red pepper flakes if you want it spicy.

13Eat!
