  • 1 pkg. frozen pizza (enough for a standard size pizza)
  • 2 Tbsp. olive oil
  • 2 garlic cloves
  • 2 medium yellow onions
  • 3 medium red bell peppers, cored and sliced
  • 1/4 c. fresh chopped parsley
  • 1 tsp. dried oregano
  • salt to taste
  • 1/2 c. Parmesan cheese
  • 1 (28 oz.) can crushed tomatoes
  • 1 (16 oz.) pkg. Mozzarella cheese, shredded

Directions

    Press dough into an 18 x 13-inch lightly oiled pan.

    Heat in a frying pan the garlic, onions and peppers; using the olive oil also.

    Saute a few minutes, cover and reduce the heat to low. Cool the pepper mixture over low heat for 20 minutes, stirring occasionally.

    Add everything, except for the cheeses, to the pan until the excess water evaporates.

    The peppers should be very tender and the mixture not watery.

    Allow the mixture to cool completely.

    Spread 1/2 of the mixture lengthwise down the center of the dough.

    Add half of each cheese.

    Fold one side of dough over mixture.

    Repeat and fold other side over.

    Bake in preheated oven at 375° for 45 minutes or until golden brown.
