- 1 c. Monterey Jack cheese, shredded
- 1/4 c. fresh parsley, chopped
- 1 pkg. fresh spinach, chopped
- 3 to 4 green onions, chopped
- 1/2 lb. fresh mushrooms, chopped
- milk
- bread crumbs
Directions

1Dip sole in milk, then in bread crumbs.

2Mix remaining ingredients and place 1 to 2 heaping spoonfuls in center of fillet.

3Roll up and place, seam side down, in baking dish.

4Bake at 350° for 20 to 30 minutes.
