  • 6 to 8 sole fillets
  • 1 c. Monterey Jack cheese, shredded
  • 1/4 c. fresh parsley, chopped
  • 1 pkg. fresh spinach, chopped
  • 3 to 4 green onions, chopped
  • 1/2 lb. fresh mushrooms, chopped
  • milk
  • bread crumbs

Directions

    Dip sole in milk, then in bread crumbs.

    Mix remaining ingredients and place 1 to 2 heaping spoonfuls in center of fillet.

    Roll up and place, seam side down, in baking dish.

    Bake at 350° for 20 to 30 minutes.
