Rolled Stuffed Beef Roast

- 6 lb. boneless beef roast
- 6 slender carrots
- 4 medium potatoes
- 1 celery stick
- 1 large onion
- black pepper as desired
Directions

1Leave carrots whole.

2Cut potatoes in fourths lengthwise. Chop celery and onion fine.

3Starting at one end of meat, place a layer of carrots and a layer of potatoes.

4Repeat.

5Put chopped celery and onion on last.

6Sprinkle half the salt on top of vegetables.

7Form meat roll.

8Tie or pin with toothpicks. Sprinkle other half of salt on outside of meat roll.

9Brown meat in a very hot oven, then add a quart of hot water.

10Cover and bake at 250° for 3 hours.
