Roly-Poly Lasagna

  • 8 lasagna noodles
  • 1 lb. Ricotta cheese
  • 2 c. Mozzarella cheese, shredded
  • 1 large egg
  • 1/2 (10 oz.) pkg. frozen chipped spinach, thawed
  • 1/2 tsp. salt
  • 1 (14 oz.) can tomato sauce
  • 2 Tbsp. parsley
  • 2 Tbsp. Parmesan cheese

Directions

    Preheat oven to 350°.

    Prepare noodles as directed on package. In a bowl, combine cheeses, egg, spinach and salt; mix well. Place one lasagna noodle on work surface and spread 1/2 cup of the mixture over the noodle.

    Roll up.

    Continue with remaining noodles. Spread 1 cup of tomato sauce over bottom of baking dish. Place in noodles, seam side down.

    Pour remaining sauce over center of each noodle.

    Cover with foil, bake 20 minutes. Sprinkle with Parmesan cheese and parsley and serve.
