Ingredients

  • 1 lb. lean beef
  • 1 Tbsp. butter or margarine
  • 1 Tbsp. olive oil
  • 1/2 lb. sliced fresh mushrooms
  • 1/2 large onion, sliced
  • 2 cloves garlic, pressed
  • 1 c. crushed tomatoes
  • 1/2 c. chopped parsley
  • 1/2 c. beef broth
  • 1/2 c. red wine
  • 1/2 c. grated Parmesan cheese
  • 1/4 tsp. black pepper

Directions

    Cut meat into 1-inch cubes; brown in butter and oil over medium heat; remove.

    Saute mushrooms, onions and garlic for 3 to 4 minutes.

    Add tomatoes, parsley and pepper; simmer 5 to 10 minutes.

    Add wine, broth and cheese; simmer 5 minutes.

    Stir in meat and mushrooms.

    Cover and cook for 1 hour.

    Add water or broth if needed.
