- 1 lb. lean beef
- 1 Tbsp. butter or margarine
- 1 Tbsp. olive oil
- 1/2 lb. sliced fresh mushrooms
- 1/2 large onion, sliced
- 2 cloves garlic, pressed
- 1 c. crushed tomatoes
- 1/2 c. chopped parsley
- 1/2 c. beef broth
- 1/2 c. red wine
- 1/2 c. grated Parmesan cheese
- 1/4 tsp. black pepper
Directions

1Cut meat into 1-inch cubes; brown in butter and oil over medium heat; remove.

2Saute mushrooms, onions and garlic for 3 to 4 minutes.

3Add tomatoes, parsley and pepper; simmer 5 to 10 minutes.

4Add wine, broth and cheese; simmer 5 minutes.

5Stir in meat and mushrooms.

6Cover and cook for 1 hour.

7Add water or broth if needed.

8Serves 4.
