  • 1 tbsp Olive Oil
  • 1 1/2 lb Flank Steak (cut in half)
  • 1 large Onion (sliced 1/2 inch thick)
  • 1 Green Pepper (sliced 1/2 inch thick)
  • 1 Red Pepper (sliced 1/2 inch thick)
  • 1 can Diced Tomatoes (28 oz)
  • 1/4 cup Sofrito
  • 3 tbsp Tomato Paste
  • 2 clove Garlic (minced)
  • 1 Bay Leaf
  • 1 1/2 tsp Ground Cumin
  • 1 tsp Dried Oregano
  • 1/2 tsp Salt
  • 2 cup Cooked rice.

    In a 4 quart slow cooker mix ingredients for the sauce.

    Heat oil in large skillet over med-high heat.

    Brown steak well on both sides.

    About 5 minutes.

    Add onions, peppers and browned steak to the sauce.

    Be sure steak is covered with the sauce.

    Cook until meat is fork tender.

    10 - 12 hours on low, 5-6 hours on high or 3 hours at simmer on the stove.

    Remove meat to plate.

    Shred with two forks.

    Return to pot and stir.

    Serve over rice.
