- 1 tbsp Olive Oil
- 1 1/2 lb Flank Steak (cut in half)
- 1 large Onion (sliced 1/2 inch thick)
- 1 Green Pepper (sliced 1/2 inch thick)
- 1 Red Pepper (sliced 1/2 inch thick)
- 1 can Diced Tomatoes (28 oz)
- 1/4 cup Sofrito
- 3 tbsp Tomato Paste
- 2 clove Garlic (minced)
- 1 Bay Leaf
- 1 1/2 tsp Ground Cumin
- 1 tsp Dried Oregano
- 1/2 tsp Salt
- 2 cup Cooked rice.
Directions

1In a 4 quart slow cooker mix ingredients for the sauce.

2Heat oil in large skillet over med-high heat.

3Brown steak well on both sides.

4About 5 minutes.

5Add onions, peppers and browned steak to the sauce.

6Be sure steak is covered with the sauce.

7Cook until meat is fork tender.

810 - 12 hours on low, 5-6 hours on high or 3 hours at simmer on the stove.

9Remove meat to plate.

10Shred with two forks.

11Return to pot and stir.

12Serve over rice.
