  • 2 lbs raw potatoes
  • 1 tablespoon salt
  • 3 -4 tablespoons fat (oil or butter)

    Peel the potatoes grate them into fine strips.

    Heat the fat in the frying pan.

    Add the potatoes, sprinkle with salt and stir well to mix them in with the fat.

    Cover and fry for 20-30 minutes over medium heat, turning regularly.

    Then uncover the pan, turn the heat up and fry for a further 20 minutes.

    Towards the end of this time form the mixture into a cake shape.

    Do not stir them.

    Flip out of the pan onto a serving dish.
