1Peel the potatoes grate them into fine strips.

3Add the potatoes, sprinkle with salt and stir well to mix them in with the fat.

4Cover and fry for 20-30 minutes over medium heat, turning regularly.

5Then uncover the pan, turn the heat up and fry for a further 20 minutes.

6Towards the end of this time form the mixture into a cake shape.

7Do not stir them.

8Flip out of the pan onto a serving dish.
