Ingredients

  • 1 cup whole wheat flour
  • 1 cup natural bran
  • 12 cup wheat germ
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 50 ml egg substitute
  • 1 cup low-fat milk
  • 1 banana
  • 1 apple
  • 1 carrot
  • 1 teaspoon vanilla
  • 1 tablespoon margarine
  • 1 cup raisins

Directions

    Grate the carrot and apple.

    Mash the banana.

    Mix together in a bowl whole wheat flour, bran and wheat germ.

    Add the cinnamon, baking soda and baking powder.

    Add to the flour mixture the egg substitute and milk.

    Mix well.

    Add the grated carrot, grated apple and mashed banana.

    Stir well.

    Add the margarine, vanilla and raisins.

    Stir again.

    Preheat oven to 350F.

    Grease a muffin tray (12) with cooking spray.

    Spoon mixture evenly into the muffin tray.
