- 1/2 c. graham crumbs
- 1 3/4 c. sugar
- 2 lb. cream cheese
- 1 lemon and rind
- 4 eggs
Directions

1Butter inside of pan 8 x 3-inch deep.

2Do not use spring-form pan.

3Sprinkle crumbs around bottom and sides.

4Shake out excess. Beat cheese, eggs, sugar, lemon juice, rind and vanilla on low until blended.

5Increase to high.

6Continue until thoroughly blended.

7Pour into prepared pan; shake to level.

8Set pan in slightly larger pan with 1/2-inch of water.

9(Not to touch sides.) Bake 1 1/2 to 2 hours.

10Turn off oven and let cake stay in oven 20 minutes.

11Remove cake from water and place on rack until room temperature.

12Invert over plate.

13Garnish with fruit if desired.
