  • 1 whole chicken
  • 1 small onion
  • 1 small bell pepper
  • 1 stick oleo
  • 1 (7 oz.) pkg. vermicelli spaghetti
  • 1 (16 oz.) can English peas
  • 1 (8 oz.) jar mushrooms
  • 1 lb. Velveeta cheese
  • 1 can diced Ro-Tel

Directions

    Boil chicken seasoned with salt, pepper and celery. Remove from bones.

    Reserve 1 1/2 quarts broth. Saute onion and bell pepper in oleo. Boil package of vermicelli in broth.

    Do not drain. To this, add the peas (drained) and mushrooms (drained). Cut cheese into small pieces and add this, Ro-Tel (juice optional), onion and pepper with chicken.

    Mix carefully.

    Put in large casserole dish and bake at 350° for 30 minutes.
