  • potatoes, sliced chip style, boiled and drained
  • 1/2 stick margarine
  • 1 onion
  • 1 bell pepper
  • 1 lb. Velveeta cheese
  • 1 can Ro-Tel tomatoes
  • 1 (4 oz.) jar mushrooms, drained

Directions

    Saute onion and pepper in margarine.

    Add cheese and melt. Add tomatoes and mushrooms. Pour this mixture over potatoes in a baking dish.

    Bake at 350° for 30 minutes.
