- 1 chopped onion
- 1 bell pepper, chopped
- 1 can mushrooms, drained
- 1 can Ro-Tel tomatoes, chopped with juice
- 1 can cream of mushroom soup
- 1 lb. Velveeta cheese, cubed
- 5 lb. potatoes, sliced
