  • 7 or 8 medium baking potatoes, peeled, cubed and boiled
  • 1 large can mushrooms, sliced
  • 1 lb. Velveeta cheese, cut up
  • 1 small can Ro-Tel
  • 1 large bell pepper, chopped (optional)
  • 1 large onion, chopped
  • 1/2 stick margarine
  • salt to taste

Directions

    Drain potatoes and lay in casserole dish. Saute bell pepper, onion and mushrooms in margarine. Add Ro-Tel and cut up cheese. After mixture melts, pour over potatoes. Heat in oven until mixture bubbles at 350°.
