- 6 to 8 potatoes
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 lb. Velveeta cheese, cubed
- 1 (4 oz.) can mushrooms
- 1 c. Ro-Tel tomatoes
- 1/2 stick oleo
Directions

1Boil potatoes until done; cool.

2Slice and place in casserole dish.

3Saute onion and bell pepper in oleo.

4Add cheese, Ro-Tel tomatoes and mushrooms.

5Pour over potatoes.

6Bake in oven until bubbly.
