Ingredients

  • 1/2 (1 lb.) pkg. creamettes rotini (uncooked)
  • 1 c. red and yellow bell peppers
  • 1/2 small red onion, cut in wedges
  • 1/4 lb. fresh snow peas
  • 1/3 c. cashews
  • 1/2 c. peanut oil
  • 2 Tbsp. lemon juice
  • 1 Tbsp. soy sauce
  • 1 clove garlic, minced
  • dash of ground ginger

    Prepare rotini as package directs.

    Drain well.

    Add next 5 ingredients in small bowl.

    Blend oil, lemon juice, soy sauce, garlic and ginger.

    Toss with rotini mixture.
