Ruby Red Grapefruit Jelly

  • 1 envelope (1 3/4 Oz. Size) Dry Pectin
  • 3 cups Fresh Squeezed Ruby-Red Grapefruit Juice
  • 4-1/2 cups Granulated Sugar

    You will also need seven 8-ounce jelly jars.

    Whisk together the pectin and grapefruit juice in a medium saucepan. Bring to a full boil over medium-high heat. Add the sugar and bring to a rolling boil; boil hard for 1 minute. Remove from heat and pour into prepared jelly jars, leaving 1/4 inch space from top. Place lids and rings tightly, and process in a boiling water bath 5 minutes.

    Note: Use directions for canning that comes with your canning equipment. A canning starter set includes everything: a 21 1/2 qt. water bath canner, rack, funnel, jar lifter, lid lifter. Once you've started canning, it's hard to stop!
