Ruby'S Stuffed Peppers

  • 6 to 8 green bell peppers
  • 1/2 c. rice (uncooked)
  • 1 lb. lean ground beef
  • 1/3 c. chopped onion
  • 1 c. canned tomatoes or more if needed
  • 1 tsp. Worcestershire
  • 1 tsp. salt
  • 1/2 tsp. pepper

Directions

    Cut off tops of peppers and remove seeds, etc.

    Parboil peppers in lightly salted water about 2 minutes.

    Cook rice by directions on box.

    Mix ground beef, cooked rice, chopped onion, Worcestershire, salt, pepper and tomatoes.

    Stuff peppers.

    Place in casserole and bake at 350° for 30 to 40 minutes.
