Rum Chocolate Mousse

- 1/4 c. sugar
- 1/4 lb. semi-sweet chocolate
- 2 egg whites, stiffly beaten
- 3 Tbsp. dark rum
- 2 c. + 2 Tbsp. whipping cream
Directions

1Cook the sugar in the rum over a very low heat until it's dissolved.

2Melt the chocolate in a double boiler.

3Then stir in 2 tablespoons of cream.

4Add rum syrup and stir until smooth.

5When cooled, fold in the egg whites.

6Whip the 2 cups cream and fold it gently into the chocolate mixture.

7Chill in 8 to 10 glasses at least 2 hours before serving.
