Rum Chocolate Mousse

  • 1/4 c. sugar
  • 1/4 lb. semi-sweet chocolate
  • 2 egg whites, stiffly beaten
  • 3 Tbsp. dark rum
  • 2 c. + 2 Tbsp. whipping cream

Directions

    Cook the sugar in the rum over a very low heat until it's dissolved.

    Melt the chocolate in a double boiler.

    Then stir in 2 tablespoons of cream.

    Add rum syrup and stir until smooth.

    When cooled, fold in the egg whites.

    Whip the 2 cups cream and fold it gently into the chocolate mixture.

    Chill in 8 to 10 glasses at least 2 hours before serving.
