- 1/4 c. raisins
- 1/4 c. light rum
- 1 lb. Ricotta
- 1/4 c. sugar
- grated peel of 1 lemon
- 4 thin slices lemon (for garnish)
Directions

1Soak raisins in rum for 1 hour.

2In a mixing bowl, beat Ricotta with a fork or mixer until creamy and light.

3Add sugar and lemon peel.

4Mix well.

5Stir in raisins and rum.

6Spoon mixture into 4 sherbet glasses and chill.

7Garnish with thin slices of lemon.
