  • 1/4 c. raisins
  • 1/4 c. light rum
  • 1 lb. Ricotta
  • 1/4 c. sugar
  • grated peel of 1 lemon
  • 4 thin slices lemon (for garnish)

    Soak raisins in rum for 1 hour.

    In a mixing bowl, beat Ricotta with a fork or mixer until creamy and light.

    Add sugar and lemon peel.

    Mix well.

    Stir in raisins and rum.

    Spoon mixture into 4 sherbet glasses and chill.
