Rum Sauce

  • 13 cup butter
  • 12 cup brown sugar
  • 14 of a vanilla bean, halved lengthwise
  • 2 -3 tablespoons dark rum

Directions

    Melt butter in large skillet.

    Stir in brown sugar.

    Scrape seeds from the vanilla bean into skillet and add also the bean halves.

    Cook, uncovered, over medium heat for 4 to 5 minutes or until sauce is thick and syrupy, stirring frequently.

    Stir in 2 to 3 tablespoons of dark rum.

    Drizzle with rum sauce over whatever you like.

    Its nice with oven baked plantains.
