Rum Walnut Balls

  • 1 3/4 c. vanilla wafers, crushed
  • 1 3/4 c. sifted confectioners sugar
  • 1 1/2 c. ground walnuts
  • 1/4 c. unsweetened cocoa powder
  • 3 Tbsp. honey
  • 1/2 c. light or dark rum

Directions

    In bowl, stir together the wafer crumbs, sugar, walnuts and cocoa until well blended.

    Stir honey into rum and gradually add to dry ingredients, mixing first with spoon, then your hands.

    Add just enough rum mixture to make dough hold together.

    Roll bits of the dough into small balls about 1-inch in diameter.

    Roll in confectioners sugar.

    Balls will seem soft, but will firm up.
