- 1 lb. mackerel fillets
- 3 Tbsp. lime or lemon juice
- 3 c. coconut milk
- 1 large onion, finely chopped
- 2 cloves garlic
- 1 lb. tomatoes, peeled and chopped
- salt
- freshly ground pepper
- 1 tsp. thyme
- 1 Tbsp. vinegar
- 1 Tbsp. fresh hot pepper, finely chopped
Directions

1Pour the lime juice over fish and set aside.

2Cook the coconut milk in a heavy frying pan until it is oily.

3Add the onion and garlic and cook until the onion is tender.

4Add the hot pepper, tomatoes, salt, pepper, thyme and vinegar.

5Stir and cook very gently for 10 minutes.

6Drain fish; add the other ingredients and cook until the fish is tender, about 10 minutes.

7Serve hot with boiled green bananas and boiled flour dumplings.

8Run down can also be used as a stuffing for breadfruit.

9Salt codfish or lobster can be substituted for mackerel.
