- 1 to 2 lb. chicken breasts (either with or without bones)
- 1 bottle Russian salad dressing
- 1 small jar apricot preserves
- 2 small onions, thinly sliced
- salt and pepper to taste
Directions

1Line a 9 x 13-inch baking dish with foil.

2Arrange chicken evenly in dish; salt and pepper to taste.

3Place sliced onion on top of chicken.

4Mix Russian dressing and preserves together. Pour over chicken.

5May mix a small amount of water with dressing mixture if it appears too thick.

6Seal with a second piece of foil.

7Bake at 350° until chicken juices are clear.
