- 3 large onions
- 3 Tbsp. oil
- 2 carrots, sliced into thin pennies
- 3 Tbsp. flour
- 2 coarsely chopped tomatoes
- 2 Tbsp. tomato paste or small can tomato paste (if you have no fresh tomatoes)
- parsley
- basil (optional)
- salt and pepper
Directions

1Saute onions in oil until clear.

2Add carrots.

3Saute until soft.

4Add flour and stir.

5Add chopped tomatoes and paste (or small can of tomato paste).

6Stir.

7Top off with enough water to fill the skillet, leaving room for stirring.

8Add parsley, salt and pepper and basil to taste.

9Simmer until thick.
